What a wonderful, versatile, and underappreciated group of plants. Their fleshy leaves have a slight saltiness and act a lot like spinach in the kitchen. Unlike spinach, they can grow well into the summer. They're superb raw, adding contrast and interest to salad mixes, or cooked like spinach. Once they do start to bolt, you're in for another treat! The flower stalks get huge and are highly ornamental, second to none as a cut flower. This mix contains purple, red, and copper plants for a smorgasbord on the plate and a show stopping floral display in the field. Will gently self-seed. 35 days leaves, 70 days flowers.
